Chicken and tomato balti

Not the same as the old recipe we had but similar. Main thing I think to improve this would be to simmer the tomatoes by themselves (swear the old recipe did that). And/or remove the tomato skins like for gazpacho.
Ingredients
- 4 tbsp oil
- 6 curry leaves
- 1/2 tsp mixed onion & mustard seeds
- 8 medium tomatoes sliced
- 1 tsp ground corriander
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp garlic pulp (I just use 1 clove, prob good w/more)
- 675g skinned chicken, cubed
- 150ml/ 2/3 cups water
- 1 tbsp sesame seeds roasted (Skipped because don’t think they were in original recipe)
- 1 tbsp chopped fresh coriander/cilantro
Instructions
- Heat the oil and add curry leaves and mixed onion and mustard seeds
- Lower heat and add tomatoes β cook these mofos down to a saucy consistency
- Mix in a dish, ground coriander, chili powder, salt, ground cumin and garlic
- Add mixed spices to the tomatoes and stir
- Add chicken and mix together
- Stir fry for approx 5 minutes
- Add water and continue cooking and stirring until chicken is cooked
- Add sesame seeds and fresh cilantro and serve
