Spicy shrimp noodles

Ingredients

Ingredients for 3 people:

  • 1/2lb large, peeled & deveined raw shrimp
  • 6oz (168g) noodles (egg noodles, lo mein, even spaghettini works)
  • 4 cloves garlic, peeled and thinly sliced
  • 1tsp (or more) root ginger, peeled and finely diced
  • Broccoli florets(idk how much…enough for 3 people)
  • 2 spring onions (scallions) sliced thinly
  • 2 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp toasted sesame oil
  • 2 tbsp light olive oil
  • 1 tbsp chili crisp (Fly by Jing or similar)
  • Bean sprouts

Instructions

Mix the soy sauce, rice wine vinegar and sesame oil together in a small bowl.

Cook the pasta as per directions. Do not overcook as it will get stir fried a little too. Drain, rinse with cold water to stop cooking and drizzle with some oil to prevent sticking. Set aside.

In a hot wok add 1 tbsp light olive oil, swirl and add the shrimp. Separate as needed so it’s in a single layer. Give it 60-90 seconds to char then flip to the other side. Cook briefly then remove to a plate and set aside.

Allow the wok to get its heat back then add the second tbsp of olive oil.

Add in the garlic, ginger and white parts of the spring onions. Stir fry for 30s until aromatic. Add the broccoli and stir fry 3-4 minutes. Add a splash of water to help it steam and cook better.

Add the noodles, stir briefly to spread them around then let sit undisturbed for 30-45 seconds. Toss and repeat once or twice.

Return the shrimp to the wok, add the premixed sauce and combine. Let cook for 45 seconds.

Pull off the heat, add the Fly by Jing chili crisp and butter. Stir to combine and melt the butter.

Serve topped with the bean sprouts, green tops of the spring onions and optionally a soft boiled or fried egg each.


Wonder if this would be more interesting with more toasted sesame oil or cooked in peanut or sesame oil rather than light olive oil. TBD.
